Our chocolate making classes are interactive, participatory and very hands on.
We can accommodate groups (minimum 5 people/maximum of 12 people) in our kitchen space or in your home.
In this class you will trace the history of chocolate and explore the ins and outs of fine chocolate making. We will investigate the differences between white, milk, and dark chocolate, and discuss what makes certain chocolate ‘good’. We will learn about the tempering process first hand, make lollipops in molds, and package the lollipops. We'll end with a fun activity designed to test your new skills!
This class includes everything included in the 2-hour class, as well as making your own truffles!
Bean to bar intensive
This 5 hour class will teach you all the steps necessary to make your own delicious chocolate bars – from the bean to the bar. We will discuss the history of chocolate, growing regions, how to choose and store cocoa beans, and how to choose the cacao percentage. We will explore every step of the process in depth, from the harvest to the chocolate bar. This includes fermentation, drying, roasting, cracking, winnowing, grinding, conching, and tempering.
